You are absolutely correct. You should never have one generic CV for all roles you are applying for.

Even similar roles might be different in their requirements and may demand different CVs too.

The key rule is to always tailor your CV with relevant experiences and information. The last part says it all... if you want to become an accountant, hiking is a pretty useless experience in that case.
